Serves 6 to 8
INGREDIENTS:
2 cups COOKED whilte rice
1 pound cooked shrimp
2 tablespoons butter or margarine
1 green pepper, seeded and chopped
1 onion, chopped
1 can (10 3/4 ounce) condensed cream of mushroom soup
2 cups shredded sharp cheddar cheese
1 tablespoon Worcestershire sauce
1/2 teaspoon dry mustard
1 teaspoom salt
ground pepper to taste
DIRECTIONS:
* Pre-heat oven to 375 degrees.
* Heat butter in pan; saute the onion and peppers on medium heat until soft, between 5-10 minutes.
* In large bowl, combine cooked rice, soup, 1 1/2 cups of cheese, vegetables, cooked shrimp, Worcestershire sauce, dry mustard, salt and pepper. Mix well.
* Spray 9-inch square baking dish or similar-sized casserole dish with vegetable spray. Spoon mixture into dish. Top with remaining 1/2 cup cheese.
* Bake in oven for between 30-40 minutes, until bubbly and cheese slightly browned.
